California Quinoa Salad

Ingredients:

2 cups mixed quinoa from Trader Joe’s
4 cups water (for cooking quinoa
1 package frozen mango
1/2 large red onion
1 medium to large
small bunch cilantro
1-2 cups coconut
3/4 – 1 cup unsalted, dry-toasted slivered almonds
1-1 1/2 cups raisins
2-3 cups frozen edamame
Juice 5 limes
4 Tbsp Balsamic Vinegar

Preparation:

Flush quinoa well, cook as coordinated.

Cushion quinoa well when done, spread out and let cool.
